Workshop: Payroll & Employment Law


These workshops fill up extremely quickly as they cover all the changes to the Modern Awards in 2010, register now to secure your place.

 

Completing this program will enable participants to:

  • Understand the employer's legal responsibility in relation to record keeping

QLD Baking Industry Awards Night


Hands- on Artisan Bread Workshop with Eric Ramonda from Banneton Bakery

 

Learn the secrets to organic, artisan sourdough, traditional baguette and delicious foccacia in this small, hands-on class of just 12, with renowned Brisbane baker Eric

Ramonda.

Over four hours Eric will provide theory, a basic understanding of different flours and their applications, recipes and knowledge as well as showing how to score, kneed and mould bread and make a starter culture which each participant can then take home and use as their own.

 

The last half hour of the class will be a relaxed Q and A session where attendees can enjoy the fruits of their labour while talking with both Eric and Quentin Kennedy from Kialla Pure Foods.

Hands – On Chocolate Workshop with The Chocolate Artisan Jessica Pedemont.


Felchlin Australian Ambassador Jessica Pedemont from Sydney-based Chocolate Artisan, is proudly presenting two hands-on chocolate classes for one day only in Brisbane.

 

 

The morning session is for beginners and will cover tempering, making and using ganache, making chocolates and décor for decoration on cakes and patisserie.

 

This is followed by an afternoon advanced class which will include finishing work, using transfers, painting and applying dusts and metallic powders.

 

Participants are welcome to do one class or the full day.

Workshop: How to Diversify Your Baking Business

 

Moffat’s Brad Dance (Bakery Division) and Scott Taylor (Food Service Division) in conjunction with the Bakery Industry Association of Queensland (BIAQ) present this workshop exclusively for the baking industry.


This workshop will cover:

  • Baking industry trends

  • The benefits of diversification

  • Revenue Generation

  • Product overview with special offers.

 

Date: Wednesday 25th August 2010 from 10.30am

Cupcake Day for RSPCA

The annual RSPCA Cupcake Day is on again, raising money to prevent cruelty to animals by actively promoting their care and protection. This year National Baking Industry Association is proud and excited to be an official sponsor of the event with Weston Milling also supporting the endeavour. You can help too by registering your bakery as an official RSPCA Cupcake Day Bakery.

 

To do this is easy; simply follow these three steps;

 

 

  1. Register with the NBIA* by calling 07 3831 5961 for a form or by emailing briana@nbia.org.au

  2. Receive a FREE 2kg sample bag of Medelina Cake Mix from your friendly Weston Milling representative that will make around 44 delicious cupcakes using the recipe below.

  3. Once cupcake day is over, simply calculate the profits and return them to NBIA. We will then forward them onto the charity.

*Registrations close Friday August 6.

 


Basic Recipe

 

Weston Milling

Madelina Cake Mix…….1.000 kg

Water…………………....…0.650 ltrs

Canola Oil………………...0.120 kg

 

 

Method

1. Add water, canola oil, Medelina Mix to bowl.

2. Blend on low speed for 2 minutes. Scrape down.

3. Blend on medium speed for 4 minutes.

4. Scale as required.

5. Bake at 160°C.

6. Decorate as required, once cool.


 

By using the donated cake mix, each cupcake will cost approximately $0.17.

So if each one is sold at $2.20, each registered bakery will be able to donate almost $90 to the RSPCA! But why stop there, make a few extra batches yourself and you could be donating over $100 – a huge contribution to the charity and a big difference in the lives of the animals.

Registrations for the Annual Queensland Baking Competition are now open. Get in early to secure your place in what is to be a great day of events, workshops and competition.

Event Booking Terms *

CANCELLATIONS: Refunds can be provided where NBIA/ BIAQ is emailed notice of a cancellation, seven or more working days prior to the day of the booked event; an administration fee of $50 will be deducted. // TRANSFERS: Another person may take your registered place on an event if emailed notification is received prior to the commencement of the event. // DEFERMENTS: The full value of a deferment may be carried over to another event as long as it is redeemed within six months of the original seminar date. An emailed deferment notice needs to be emailed to NBIA/BIAQ at least seven working days prior to the commencement of the booked event. Second deferments are not available. // MINIMUM NUMBERS: Events are subject to cancellation if minimum booking numbers are not met.
